From his beginnings in the Bronx to his now west coast lifestyle, Chef Jeffrey Strauss brings an undeniably, renowned cuisine in every adventure he partakes in as a chef. From cooking for well-known celebrities, hosting galas, owning an award-winning restaurant, and now preparing for his upcoming venture at the 2017 Breeders’ Cup®, he can truly say he has and will continue to have a diverse career as a chef.
Beginnings & Passion
Before putting on his official chef coat, Strauss found himself working as a bus boy when he was a junior in high school. This became his first opportunity to jump last minute on the line, prepare three dishes, hear his first great job and spearhead his passion for the rest of his life.
Although, we should mention that a passion for food has been a part of his life for as long as he can remember. Growing up, his dad always said he ordered the most expensive meal on the menu, specifically lobster.
From there, he went on to attend school in Massachusetts, and further continued his education in Europe under several renowned chefs in England, France and Italy, including Chef Albert Roux at Le Gavroche, Chef Rogers Vergé at Moulin de Mougin, and Gualtiero Marchesi. It was in Europe where his passion for local, fresh ingredients developed, as well as his amazement of their ability to make everything from a-z from scratch.
Taking his talents to the West Coast, Chef Strauss opened Pamplemousse Grille in 1996, hoping to blend a French Country kitchen with a New American style. Serving the San Diego community and visitors to the area, Pamplemousse Grille offers a variety of fresh, unique dishes built to delight all your senses. When asking what dish he is most proud of or a favorite on the menu, Chef Strauss compares them to having kids – you love them all for different reasons. When we pushed a little harder, he suggested two delightful options, which we are looking forward to trying when we head to California for the 2017 Breeders’ Cup. As a first-course, he suggested the Smoked Seafood Medley and as an entrée option, the Mixed Grille of Game.
Preparing for the 2017 Breeders’ Cup®
Preparing for the upcoming Breeders’ Cup® weekend is no easy feat for any Chef. Feeding over 1800 people on both Friday and Saturday, providing meals for pre-race weekend events, and running a sought-after restaurant for the weekend, are just some of the things on Chef Strauss’ plate in the first week of November.
What can you expect? Chef Strauss wants everyone to walk away from the weekend having the best trackside culinary experience possible. Think local, fresh and unique dishes for what is to come, and boy are we excited.
Outside of his chef’s coat, Strauss is an avid horse racing fan and is involved in the industry as a part owner on several horses, one which is named after his restaurant. His racing track record has had its ups and downs, like any other owner, but he continues to love and invest in the sport as an adventure and hobby. His pick for winner of the 2017 Breeders’ Cup Classic? He believes it’s down to a three-horse race, Gun Runner, Arrogate, and Collected.
